Superfoods….What They Are and How to Eat Them!

According to the Merriam-Webster dictionary, the definition of a ‘Superfood” is:
“a food (such as salmon, broccoli, or blueberries) that is rich in compounds (such as antioxidants, fiber, or fatty acids) considered beneficial to a person’s health.”

The Mayo Clinic adds sweet potatoes, wheat germ, vegetable juice, spinach, almonds and apples to this growing list of nutrient-dense foods.

The good news is that there are so many wonderful ‘superfoods’ to choose from, getting them into your daily diet isn’t the chore you thought it would become. If you are thinking that eating Superfoods means living off of vegetables, you might want to do a little bit more research. The list of superfoods includes dairy, grains, and beans as well.

It is as easy as carrying a small bag of raw almonds in your car or purse as a snack or cutting some apple up into your lunch salad. A very easy morning favorite of mine is:

It literally is a slice of sweet potato (approx. ΒΌ inch thick) popped into the toaster. (I usually toast it twice)
Then, use your imagination. What do you feel like? Sweet or savory? Sweet potato toast is delicious with Ghee or organic butter and a sprinkle of cinnamon.

It is equally delicious with hummus on it, a light vegetable cream cheese. Or, if you have the time, an egg and some alfalfa sprouts with a fine drizzle of oil and vinegar or just simple seasoning.

This handy little superfood will provide the fiber and nutrients to keep you running and satiated until lunch.

Getting Superfoods into your diet is not rocket science. It is simply a matter of making sure that you have them in your refrigerator and pantry so they are easily accessible when snacking or building your family meals.
